Dancing Coyote 2011 Pinot Grigio
Unfortunately, this yummy number is sold out at the winery. I just found out that they have released their 2012 so I think I’ll have to head back over there.
This is another gentle white from Dancing Coyote ,which they do very well. If you are new to wine, this has your name written on it, especially if you are looking to expand your repretoire.
The orange and green apple notes are very welcome on the palate. As you get into into it, the acidity does have a little bite so be warned. I think a bit of age would help this wine mellow and I would love to taste this again after it has aged. After a year in the bottle, I bet the citrus and fruit would be mellow and ready for a conversation and there would be a few less teeth in the bite.

Winemaker’s Notes: “Grapes were hand picked in the morning and gently pressed. Juice was cold settled and fermented cold in stainless steel tanks. The wine was allowed to sit on light lees for several months before racking. The wine was then finished for bottling, never seeing any oak of mall-lactic. A well-balanced, dry white wine with intriguing scents of green apples, pear and honeydew melon. This lighter-bodied wine has a bright crisp, mineral finish.”
